Over the last couple of days I have been working on my first wedding cake for 2012. I was excited about doing this cake as it gave me a chance to put my piping and flower making skills to the test!
The finished cake..

The cake is a 3 tier vanilla sponge cake filled with vanilla buttercream and jam. The top two tiers are raised slightly higher to allow for handmade sugar roses to be placed in between.
The piped detail was done with royal icing and a 1.5 icing tip. This was the most difficult part as I wanted to make sure it was even. To try and help me stay even I used a pin to mark the icing and I made a very small hole 1 inch apart. I then just went for it and judged the dropped lines by eye. A few of the lines took a couple of goes but I got there in the end! it took a huge amount of concentration and at 11pm at night that was a struggle.
I didn't get a chance to see Leigh-Anne but I hope they both loved it.
Happy baking!
