This week I am attending Squires Kitchen's 6 day cake decorating course and I am so far loving every minute of it! I have been wanting to attend for ages but this course is hard to get a place on as it gets booked up quickly. I have had to wait 4 months...
Our course tutor is called Paddi Clark and she is excellent. Today was all about marzipan and although I have covered a few cakes in marzipan before I definitely picked up a few tips of where I could improve. A couple of things I learnt were:
- Don't use cornflour to roll out marzipan always use icing sugar. Now this maybe something I should have known but I was quite surprised to hear that the cornflour doesn't react very well with marzipan and although it apparently won't kill you it could potentially ruin all your hard work.
- Cover the top and sides separately when preparing to cover a fruit cake with royal icing so that you can get lovely straight edges.
- Don't prick holes in your fruit cake to feed it as the liquid will seep in well enough without. I believe this is for hygiene reasons and also recently I had a fruit cake fall apart on me and I am sure it became unstable due to the number of holes I had put in it!
- Don't store your fruit cake in an air tight container as it can go moldy. All you need is a couple of layers of baking paper and foil. This allows a bit of air to circulate.
There were lots of useful tips but these were just a couple I can remember without my note book which I left in the classroom.
We covered 2 cakes in marzipan, one we will be covering in royal icing and the other in sugarpaste. I shall of course be posting pictures when I reach this stage.

For the second part of the day we did some modelling with marzipan and this was definitely the most fun part. Paddi showed us how to do her 'one minute' rose and it really was very quick and easy. Here are my finished roses:

The next project was a teddy bear and we had an excellent demo from Paddi and then we were left to our own devices!!

I will update my blog tomorrow after day 2! we will be doing lots of work with royal icing over the next couple of days and have been told that it gets a bit more intense from now on... looking forward to it.
